This dish is absolutely delicious, so simple to make and is perfect for Valentine's Day. This quick meal leaves less time in the kitchen and more time with your sweetheart.
Whole Wheat Linguine with Feta and Olives
Ingredients: 1 pound whole wheat linguine 2 cloves garlic, minced 1 teaspoon organic basil 1 tablespoon fresh parsley, roughly chopped 1 teaspoon ground organic black pepper 1 cup feta, crumbled 1/4 cup lemon juice 1 teaspoon lemon zest 1 cup kalamata olives, de-pitted and roughly chopped olive oil salt
Directions: Bring a large pot of salted water to a boil and add linguine and a splash of olive oil. Follow directions on the pasta package and cook to desired doneness, about 8-10 minutes.
While the pasta is cooking, add minced garlic to a medium-sized pan over low heat and coat bottom of pan in olive oil. Stir until garlic becomes fragrant, add basil and cook for another minute then pour into a large bowl. This process is cooking the garlic but also infusing the olive oil, so make sure to scape all of the oil into the bowl.
Add lemon juice, zest, parsley, pepper, feta and olives. Combine with strained pasta and stir. Add salt and more olive oil to taste.
